Imidapeptide (imidazole dipeptide) is a food ingredient currently attracting the most attention in industry-government-academia collaborative projects. It is an amino acid bond found in the skeletal muscles of humans and animals. It is found in high concentrations in the muscles of migratory birds, which keep their wings moving for long periods of time, and it is known that chicken breast contains two to three times more of it than beef or pork.
